Cheddar is the cornerstone of Canadian cheese. Canada’s finest Cheddars are prized internationally as the best in the world. Depending on its age, Cheddar can be mellow, milky and slightly acidulous (mild), slightly sharp and acidulous with nutty undertones (medium), or highly complex and sharp (old). The consistency gets increasingly crumbly with age.
