‘Small mouthfuls’ is the literal translation of the Italian word Bocconcini. These little balls of fresh cheese are made with 100% milk and have a firm but yielding texture and subtle milky flavour.
Bocconcini is made by a process known as pasta filata – curds are dipped into hot whey and then kneaded, pulled and shaped before being packed in water to preserve freshness.
