Made from sheep’s milk, Crotonese originates from Calabria, in the Province of Crotone, Italy. Crotonese has a natural yellow rind, with a semi-hard straw-yellow consistency that has a rich, distinct flavour. Pecorino Crotonese is an artisanal sheep's milk cheese aged in wicker baskets. It is sold in two varieties, fresh and aged. When fresh, the cheese is creamy in texture with a more pronounced flavour than a younger table cheese. When aged, it is firmer in texture and has a sharp flavour with an earthy finish. It is a creative alternative to other grating cheeses.
