Originating from the Dutch town of Edam, traditional Edam Cheese is sold as spheres that are coated in red paraffin wax. Edam’s popularity has grown over the centuries as an alternative to Cheddar and is now produced in many countries, including Canada, but without the traditional red wax coating. Mild in flavour, Edam has a slightly salty and nutty taste and almost no aroma.

Edam is second only to Gouda as Holland's most exported cheese. It's a great all-purpose cheese, especially good when served with dark beer.
