Cauliflower Ricotta Calzones

Make it Pizza! Press cauliflower mixture into a rectangle and bake for 15 minutes. Place ingredients on top starting with marinara sauce; bake for an additional 10 minutes and serve.

Ingredients:

Calzone Crust: 1 cauliflower, broken into florets, or 3 cups of crumbled cauliflower 1 large egg, lightly beaten pinch of each salt, pepper, and oregano 3/4 cup Tre Stelle® Mozzarella, shredded 3 tbsp Tre Stelle® Grated Parmesan Cheese Filling: 1/3 cup marinara sauce 4 slices prosciutto 1 cup Tre Stelle® Ricotta Cheese 2 tbsp fresh basil, cut into thin strips Topping: 1/4 cup Tre Stelle® Mozzarella, shredded 1 tsp Tre Stelle® Grated Parmesan Cheese Garnish with basil leaves and serve with marinara sauce for dipping

Instructions:

Preheat oven to 400ºF (204ºC). Pulse cauliflower florets in a food processor until crumbly. Microwave cauliflower on high for 8 minutes. Let the cauliflower cool, then place in a tea towel and squeeze out as much residual liquid as possible. Place cauliflower in a mixing bowl, add the egg, salt, pepper, oregano, Tre Stelle® Mozzarella and Parmesan Cheese, mix well. Divide into two equal portions and place on a parchment lined baking sheet. Flatten with your hands to form two circles approximately 1/4” thick. Bake for 10 minutes. Remove from oven; moving quickly, add equal portions of marinara sauce, Tre Stelle® Ricotta Cheese, prosciutto, and basil to one half of each circle. Carefully fold the cauliflower crust over to cover the Tre Stelle® Ricotta Cheese filled half. Press the edges together to seal in the filling. Sprinkle with Tre Stelle® Mozzarella and Parmesan Cheese. Bake for an additional 10 minutes and serve.
