Cornish Game Hen Stuffed with Sausage and Tre Stelle® Grana Padano

2 links Italian sausage, removed from casing and broken into pieces 1/3 cup | 75 mL onion, finely chopped 1 cup | 250 mL fresh mushrooms, any variety, chopped finely 1/4 cup | 50 mL butter, melted 1 cup | 250 mL fresh breadcrumbs 1/2 cup | 125 mL Tre Stelle® Grana Padano Cheese, grated 2 tbsp | 30 mL fresh rosemary, finely chopped salt and pepper to taste 2 cornish hens
Preheat oven to 375°F (190°C). In a medium skillet, add sausage meat and cook until browned. Remove from heat and drain off excess fat. To the same skillet, add 2 tbsp of the butter, onions and mushrooms; cook until softened. Remove from heat, place in a medium bowl and allow to cool; add fresh breadcrumbs, Grana Padano Cheese, rosemary, season with salt and pepper.Lightly stuff each Cornish hen with stuffing; close openings with skewers. Place hens in a roasting pan and bake for 1 hour. Baste periodically with remaining melted butter. Remove skewers before serving.
