Crab Quesadillas with Tre Stelle® Bocconcini

Makes approximately 12 wedges
1 cup | 250 mL cooked crabmeat, roughly chopped 3/4 cup | 175 mL prepared seafood cocktail sauce 1/4 cup | 50 mL mayonnaise 1 green onion, thinly sliced 3/4 cup | 175 mL fresh or canned corn kernels 1 tub | 200 g Tre Stelle® Bocconcini Cheese, cut into 1/2” slices. For greater convenience, try our Bocconcini Medallion Slices. They're pre-sliced and ready to use! 6 | 8” tortillas 2 tbsp | 30 mL butter, melted
In a medium bowl combine crabmeat, 1/4 cup cocktail sauce, mayonnaise, green onions and corn; mix well. Cover and refrigerate until ready to use. Preheat barbecue or indoor grill or pannini press. Spread approximately 1/2 cup of crabmeat mixture onto each of 3 tortillas; top evenly with Bocconcini Cheese slices. Top again with remaining tortillas. Brush tortillas on both sides with melted butter and grill for approximately 2 minutes or until golden brown. Cut into wedges and serve with remaining cocktail sauce.
