Cranberry Tre Stelle® Mascarpone Pots de Crème

Makes 6 servings
2/3 cup | 150 mL dried cranberries 1/4 cup | 60 mL orange liquer | Grand Marnier, Triple Sec 3 eggs 1 tub | 275 g Tre Stelle® Mascarpone 1 tub | 175 g vanilla flavoured yogurt 1/2 cup | 125 mL granulated sugar 1 tsp | 5 mL vanilla extract 1 tsp | 5 mL freshly grated orange rind 1/2 tsp | 2 mL grated nutmeg
Preheat oven to 325ºF (160ºC). Lightly butter 6 – 4 ounce ramekins. Place orange liquor in a small saucepan over medium heat, cook until warm. Remove from heat and add dried cranberries, allow to steep for approximately 15 minutes. Drain and set aside. In a large bowl add eggs and whisk lightly; add Mascarpone, yogurt, sugar, vanilla, orange rind, cranberries and blend until smooth. Place ramekins in a large baking pan lined with a dish towel. Pour mixture into ramekins and sprinkle with nutmeg. Carefully pour enough hot water into the pan to come halfway up the sides of the pan. Place in oven and bake for 30 minutes. Remove from oven and cool before serving. Refrigerate until ready to use and serve at room temperature.
