Tre Stelle® Feta and Spinach Stuffed Turkey Breast
A perfect Greek-inspired stuffing and a show-stopper too.

Ingredients:
1 – 2 lb | 907 g turkey breast half 2 cups | 500 mL fresh spinach, rinsed and coarsely chopped 2 tbsp | 30 mL olive oil 1 small onion, finely chopped 2 cloves garlic, finely chopped 1 tsp | 5 mL dried oregano 3/4 cup | 175 mL Tre Stelle® Feta Cheese, crumbled salt and freshly ground black pepper to taste 2 tbsp | 30 mL fig preserves kitchen twine
Instructions:
Preheat oven to 375ºF (190ºC). Place prepared spinach in a large bowl. In a small skillet, heat olive oil over medium heat; add onion, garlic and oregano. Cook for 3 – 4 minutes or until mixture softens. Remove skillet from heat and with a slotted spoon add mixture to spinach. Add crumbled Feta Cheese and season with salt and pepper. Add fig preserves to remaining oil in skillet and stir to combine; set aside. With a sharp knife butterfly the turkey breast so that it opens like a book. Place stuffing mixture evenly into the breast. Using kitchen twine, tie the turkey breast at three or four evenly spaced intervals to keep the stuffing from falling out. Brush with reserved fig mixture and place in the oven, uncovered for 90 minutes; brushing occasionally with fig mixture. When turkey is fork tender and juices run clear (internal temperature is at 170ºF/78ºC). Remove from oven allow to rest, covered for 10 minutes before slicing and serving.
