Green Pea and Tre Stelle® Grana Padano Crostini

Spring is here when the fresh peas arrive, pair them with woodsy herbs and Grana Padano and you have a lovely fresh tasting appetizer.

Ingredients:

1 baguette, sliced 1⁄2 cup (125 mL) olive oil 2 cups (500 mL) frozen or shelled fresh peas salt and pepper 2 tbsp (30 mL) olive oil 1⁄4 cup (50 mL) fresh thyme, minced 3⁄4 cup (175 mL) Tre Stelle Grana Padano Parmesan Cheese shavings* pesto sauce for garnish if desired

Instructions:

Preheat oven to 375˚F (190˚C). Brush both sides of baguette slices with olive oil and arrange on a baking sheet. Bake for approximately 5 minutes; turn slices and bake until golden brown. Bring a medium saucepan filled with water to a boil. Add peas and blanche for 3 minutes. Remove from heat and refresh with cold water; drain again. Place the peas into a food processor or blender with 2 tbsp olive oil; add salt and pepper to taste and blend until smooth. Put a teaspoon of mixture on top of each toasted baguette slice and garnish with a sprinkling on thyme and shavings of Grana Padano Parmesan. *Using a vegetable peeler shave slices of Grana Padano Parmesan; set aside or refrigerate until ready to use.
