Grilled Cheese Pineapple and Watermelon Kebabs

Ingredients:

8-10 bamboo skewers (soaked in water for 1 hour) 1 350 g block Tre Stelle Paneer Cheese, cut into 1 inch cubes. Fresh watermelon, cut into 1 inch cubes Fresh pineapple, cut into 1 inch cubes 1 tbsp olive oil Toppings: 1/2 lime juiced 1 tbsp liquid honey 2 tbsp raw pistachios chopped

Instructions:

Pre-heat BBQ to medium heat. Slide fruit and paneer cheese onto the bamboo skewers alternating between each one. Lightly brush all sides of the cheese with olive oil and place on pre-heated BBQ to grill for 3 minutes per side, rotating as you go. The cheese can be fragile when lifting up of the grill so you can also use foil if needed. Transfer kebabs to a plate and garnish with lime juice, honey, chopped pistachios and enjoy!
