Grilled Summer Squash Pizza with Tre Stelle® Ricotta and Grana Padano

The epitome of a perfect summer pizza - grilled vegetable, creamy ricotta cheese with just enough Grana Padano to secure a top spot in an all-time favourite vegetarian pizza.

Ingredients:

2 tsp | 10 mL olive oil 1 tsp | 5 mL balsamic vinegar 1 medium zucchini, cut into 1/4” slices 1 medium yellow squash, cut into 1/4” slices 1 cup | 250 mL Tre Stelle® Extra Smooth Ricotta Cheese 1/3 cup | 75 mL Tre Stelle® Grana Padano Cheese, grated 1/4 cup | 60 mL parsley, finely chopped 1 tsp each | 5 mL salt and ground black pepper 1 - 12” pre-baked ready made crust (we used a flatbread) Additional Tre Stelle® Grana Padano Cheese for top of pizza (optional)

Instructions:

Preheat oven to 350ºF (180ºC). Combine oil, balsamic vinegar, zucchini and yellow squash slices in a large bowl, tossing gently to coat. Place on an indoor grill or barbecue and grill 2 minutes on each side or until tender. In a medium bowl, combine Ricotta Cheese, Grana Padano Cheese, half of the parsley, salt and pepper; stir to combine. Spread Ricotta Cheese mixture onto crust, evenly arrange zucchini and squash on top. Sprinkle with remaining parsley and additional Grana Padano Cheese if desired. Bake or grill 5-10 minutes or until thoroughly heated.
