Tre Stelle® Herbed Ricotta Frittata

Makes 4 servings
8 eggs 2/3 cup | 150 mL mixed fresh herbs like basil, parsley, mint and thyme salt and pepper to taste 2 tbsp | 30 mL olive oil 3/4 cup | 175 mL Tre Stelle® Extra Smooth Ricotta Cheese 1 tbsp | 15 mL Tre Stelle® Grated Parmesan Cheese
Place eggs and herbs in a medium bowl; beat with a fork until well combined, season with salt and pepper. Preheat broiler. Add olive oil to a large non-stick skillet over medium heat. Carefully pour egg mixture into skillet and cook for approximately 5 minutes or just until set. Remove from heat; dot with spoonfuls of Ricotta Cheese and sprinkle with Parmesan Cheese. Place skillet under broiler and cook until browned [approximately 5 minutes]. Remove from broiler and cool slightly before cutting and serving.
