Tre Stelle® Mozzarella Burrito Casserole

Makes approximately 4 - 6 servings
10 small flour tortillas, 2 cut into thin strips 2 tbsp | 30 mL oil 4 green onions, chopped 1 ½ lbs | 675 kg extra lean ground beef 1 cup | 250 mL prepared salsa 1 can | 396 mL refried beans ¼ cup | 50 mL sour cream 1 can green chilies, drained or 2 chipolte peppers in sauce, chopped 2 cups | 500 mL Tre Stelle® Mozzarella Cheese, shredded Garnish: ½ cup | 125 mL sour cream 1 tomato, chopped 1 avocado, chopped
Preheat oven to 350ºF (175ºC) In a large skillet over medium heat add oil and cook onions until soft. Add ground beef, breaking up pieces with a fork and sauté for about 5 minutes. Pour off remaining liquid and add salsa; set aside. In a small bowl stir together refried beans, sour cream, green chilies or chipolte peppers; and 1 cup of shredded Mozzarella Cheese; set aside. To assemble: Spray a 9" x 12” casserole pan with non-stick cooking spray. Spread an even layer of refried bean mixture equally over each tortilla. Spread meat mixture over beans and roll. Place seam side down into casserole and sprinkle with tortilla strips and top with remaining shredded Mozzarella Cheese. Bake for approximately 10 minutes or until cheese is melted and golden. Remove from oven and serve with garnish.
