Tre Stelle® Ricotta and Pineapple Stack
Ricotta cheese has a rich, creamy taste and is a great choice for this simple, refreshing dessert.Prep Time:

Makes 4 servings
1 | 125 mL golden pineapple, peeled and cut into 8 - ½” slices 1 cup | 250 mL Tre Stelle® Extra Smooth Ricotta Cheese ½ cup | 125 mL Tre Stelle® Mascarpone Cheese ¼ cup | 50 mL granulated sugar 2 tbsp | 30 mL candied ginger, cut into tiny cubes ¼ cup | 50 mL shredded coconut 1 fresh starfruit, sliced for garnish, if desired
Chop four pineapple slices into ¼” cubes and place in a bowl. Add Ricotta, Mascarpone, granulated sugar and candied ginger, stir until combined. Place each slice of pineapple on individual serving plates. Top with a large tablespoonful of mixture. Top with equally with shredded coconut. Garnish with slices of fresh starfruit if desired.
