Makes approximately 40 toasties.
1 pound cake
½ cup | 125 mL
Tre Stelle Ricotta Cheese, Traditional
2 tbsp | 30 mL
fresh fruit for garnish
Alternately, before baking cake fingers; brush with melted butter and sprinkle with cinnamon or brush each finger with egg white and top with crushed nuts before baking.
Preheat oven to 250ºF (120ºC)
Slice the pound cake into ¾-inch slices and cut each slice into quarters.
Layer the fingers on a large pan covered in foil and bake for 30 minutes, or until fingers feel dry and are lightly toasted in colour. Remove from oven.
Preheat oven to broil.
Top each finger with a teaspoonful of Ricotta cheese. Generously sprinkle with demerara sugar and place pan under broiler. Carefully watch as sugar begins to brown and caramelize. Immediately remove from oven and serve with fresh fruit if desired.
