Roasted Pears with Prosciutto and Tre Stelle® Parmesan

Makes 18 pieces

INGREDIENTS

3 firm ripe pears

2 tbsp | 30 mL
balsamic vinegar

1 tbsp | 15 mL
olive oil

1 tbsp | 15 mL
demerara brown sugar

6 slices prosciutto

18 shaved slivers of Tre Stelle® Parmigiano Reggiano Cheese

PREPARATION

Preheat oven to 350ºF (180ºC).

Cut pears in half lengthwise; using a melon baller or a small sharp knife, remove cores. Cut each pear half lengthwise into 3 wedges. Place pear wedges in a single layer on a large baking sheet. Drizzle with balsamic and olive oil and sprinkle with sugar. Bake for 45 minutes, turning occasionally until pears are softened and liquid is thick and syrupy. Remove from oven and allow to cool slightly before handling – approximately 10 minutes.

Cut each prosciutto slice in 3 pieces lengthwise. Place a sliver of Parmigiano Reggiano Cheese onto each pear wedge and wrap with prosciutto.

Arrange on a serving platter and drizzle with pan juices.
