Tre Stelle® Roma Tomato Stuffed Vine Leaves

Makes 12 parcels
12 preserved vine leaves, drained, rinsed and patted dry 1 cup | 250 mL fresh roma tomatoes, finely diced 1 cup | 250 mL Tre Stelle® Shredded Mozzarella 1/4 cup | 50 mL fresh mint, finely chopped 1 clove garlic, minced 1 tsp | 5 mL fresh lemon rind, grated 2 tbsp | 25 mL olive oil salt and pepper to taste sliced lemon for garnish
In a medium bowl combine tomatoes, mozzarella, garlic, lemon rind, salt and pepper and mint; set aside. Place vine leaves on a flat surface and place a teaspoon of filling on the stem end of each leaf. Roll up firmly turning edges as you roll. In a medium skillet add oil and place vine leaf parcels in pan to warm gently on each side. Garnish with lemon slices and serve immediately.
