Tre Stelle® Savoury Brioche French Toast with Roasted Cherry Tomatoes 

We’ve taken the sweetness out of French toast and added in extra flavour! Perfect for a Sunday brunch or even a quick weeknight dinner.

Ingredients:

1 pint cherry tomatoes 1 tbsp | 15 mL olive oil pinch salt 1 tbsp | 15 mL fresh oregano, chopped 2 eggs, beaten 1/2 cup | 125 mL milk 1/4 cup | 60 mL Tre Stelle® Pecorino Romano Cheese, grated salt and pepper to taste 4 slices brioche bread, cut into 1/2” slices 2 tbsp | 30 mL butter 4 slices Tre Stelle® Sliced Provolone Cheese

Instructions:

Pre-heat oven to 400°F (200°C). Place the tomatoes on a cookie sheet; drizzle with olive oil and sprinkle with salt and fresh oregano. Roast until the tomatoes soften, approximately 10 minutes. Remove from oven and set aside until ready to use. In a medium bowl combine eggs, milk, Romano Cheese and salt and pepper. Preheat broiler. Melt butter in a large skillet over medium heat. Dip brioche slices in egg mixture and cook on each side until golden brown. Top with a slice of Provolone Cheese and place under broiler to melt if desired. Top with roasted tomatoes and serve.
