Shaved Asparagus and Tre Stelle® Piave Salad

2 tbsp | 30 mL freshly squeezed lemon juice 1/4 cup | 60 mL olive oil 1 tbsp | 15 mL Dijon mustard 2 tbsp | 30 mL capers, chopped salt and black pepper to taste 1 bunch fresh asparagus, washed and trimmed 1 pkg | 180 g Tre Stelle® Piave Cheese
In a small bowl whisk together lemon juice, olive oil, Dijon mustard, capers; season with salt and black pepper, set aside. Place an asparagus spear flat on a work surface; using a vegetable peeler, carefully shave asparagus into long thin strips. Using the same vegetable peeler or a sharp paring knife, cut the Piave Cheese into thin strips or shavings. In a medium serving bowl add asparagus, Piave Cheese, drizzle with dressing, toss and serve.
