Grilled Vegetable and Feta Panini

1 lb (454 g) store prepared grilled vegetables*
2 cups (500 mL) spring mix lettuce
1 tbsp (15 mL) Balsamic Cream
4 slices Tre Stelle® Feta
2 tbsp (25 mL) olive oil
4 large pita breads


Preheat panini press or indoor grill. Brush olive oil on each side of pita bread. Remove feta from tub and cut 4 ” slices from piece, cut each circular slice in half – making 8 halves. Place grilled vegetables equally on each half of pitas. Top with spring lettuce mix, balsamic cream and slices of feta. Fold pitas to make half circles and place on press or grill. Cook for approximately 5-7 minutes and serve.

Makes 4 paninis.
