My mom has been making cannolis for years, but I could never replicate her secret recipe, so I one I used Tre Stelle's. My friends tell me that this recipe is better than my mom's! Thanks Tre Stelle!

Classic sicilian cannoli

24 Cannoli shells
1 tub (475 g) Tre Stelle® Ricotta Cheese
1/2 cup (125 mL) Icing sugar
1/4 cup (50 mL) mini chocolate chips
1/4 tsp (1 mL) cinnamon
1/2 tsp (2 mL) vanilla
1/4 cup (50 mL) whipping cream, whipped
1 tbsp (15 mL) chopped almonds or pistachios (optional)
In a medium bowl, combine ricotta, sugar, chocolate, cinnamon and vanilla.
Mix well. Fold in whipped cream. Place filling into a pastry bag and pipe filling into cannoli shells. Sprinkle nuts on ends. Dust filled shells lightly with powdered sugar.
Alternative Filling: Add 3 tbsp of cocoa and 1 tsp grated fresh orange peel. Dip shell edges into melted chocolate before filling and garnish ends with chocolate sprinkles.
Makes 24 cannoli
