Fresh Strawberry and Mascarpone Squares

1 1/2 cups 375 mL fresh strawberries, washed, hulled and
chopped
½ cup 125 mL granulated sugar
1 tbsp 15 mL cornstarch
2 cups 500 mL graham cracker crumbs
¼ cup 50 mL butter, melted
1 tub 475 g Tre Stelle® Mascarpone
1 can 300 mL sweetened condensed milk
2 eggs
¼ cup 50 mL lemon juice
1 tsp 5 mL vanilla extract

Preheat oven to 350ºF (180ºC)

Place chopped strawberries and granulated sugar in a blender; process until smooth. Pour into a small saucepan, add cornstarch and stir. Cook over medium heat; stirring constantly until thickened; approximately 8 minutes. Remove from heat and set aside.

In a small bowl combine graham cracker crumbs and butter; stir to incorporate.
Coat a 13x9 inch baking pan with cooking spray and pour mixture into pan, press firmly on bottom only to create an even base.

In a large bowl beat Mascarpone until smooth; add sweetened condensed milk, eggs, lemon juice and vanilla extract; beat just until incorporated. Pour over crust evenly. Drop spoonfuls of strawberry mixture over batter. With a knife, gently swirl into a decorate pattern. Bake for 45-55 minutes.

Remove from oven, cool and refrigerate before cutting into squares.

Makes approximately 16 squares.
