Bocconcini Salad
Ingredients
1 tub Tre Stelle® mini mini Bocconcini or Tre Stelle® regular Bocconcini,
cut into quarters
1 cup (250ml) grape size tomatoes, cut in halves
1
cup (250ml) baby spinach or arugula
cup (125ml) celery, chopped
cup (125ml) red, green or yellow pepper, diced
1 small belgium endive,
gently torn
cup (60ml) fresh basil, slivered
dressing:

tbsp (30ml) lemon juice or balsamic vinegar
3 tbsp (45ml) olive
oil
salt and pepper to taste
Method
Whisk dressing ingredients together in a small bowl; set aside.
In a large bowl combine salad ingredients and dressing; toss well and serve immediately.
