Ricotta & Pineapple Stack
Ingredients
1 (125 mL) golden pineapple, peeled and cut into 8 - ½” slices
1 cup (250 mL) Tre Stelle® Extra Smooth Ricotta Cheese
½ cup (125 mL) Tre Stelle® Mascarpone Cheese
¼ cup (50 mL) granulated sugar
2 tbsp (30 mL) candied ginger, cut into tiny cubes
¼ cup (50 mL) shredded coconut
1 fresh starfruit, sliced for garnish, if desired
Method
Chop four pineapple slices into ¼” cubes and place in a bowl; add Ricotta, Mascarpone, granulated sugar and candied ginger, stir until combined.
Place each slice of pineapple on individual serving plates; top with a large tablespoonful of mixture and top with equally with shredded coconut. Garnish with slices of fresh starfruit if desired
