This delicious frittata is prepared in minutes and makes a fresh, seasonal dish that’s easy enough for weeknights yet fancy enough for Sunday brunch with family and friends. Use your imagination in the kitchen by personalizing your frittata using vegetables you already have on hand or visit your local market for ideas fresh from the garden. Once you have the egg base whisked up, the sky is the limit for additions. I found using thin asparagus, spring onions and fresh herbs went really well with the Feta cheese. Once you’ve mastered the recipe you can use your imagination and experiment with the ingredients. It’s a great way to come up with a new family favourite!
Spring Vegetable Frittata Recipe
Course: Main dish
Prep Time: 10 minutes
Cook time: 30 minutes
Ready time: 40 minutes
Tre Stelle® Product: Crumbled Feta
Prep Method: Stove top/Oven
1 tbsp olive oil
Assorted spring vegetables and herbs, approximately 2 cups chopped.
1/4 cup Tre Stelle® crumbled Feta
salt and pepper to taste
Preheat the oven to 400 degrees. Heat a cast iron skillet over medium heat and add the olive oil.
Whisk together the eggs, vegetables, herbs, feta, salt and pepper.
Pour the mixture into the skillet and cook for five minutes.
Transfer the skillet to the oven and continue cooking 20-25 minutes until firm in the center.
Let the frittata rest for 10 minutes before slicing.
