As we head into spring, slowly but surely, it’s time to leave the heavy comfort food and bulky sweaters behind.  There is nothing that raises our spirits and gets us in a good mood more than days getting longer and weather getting warmer.  It’s also a refreshing change to step away from those winter meals, which are often calorie dense. Now is the time to break out the lighter and brighter fare!   Choosing a lighter option doesn’t mean you have to give up on taste.  Using high quality, flavourful ingredients like Tre Stelle® Feta Cheese will ensure your recipes are always a success!

This delicious frittata is prepared in minutes and makes a fresh, seasonal dish that’s easy enough for weeknights yet fancy enough for Sunday brunch with family and friends.  Use your imagination in the kitchen by personalizing your frittata using vegetables you already have on hand or visit your local market for ideas fresh from the garden.  Once you have the egg base whisked up, the sky is the limit for additions.  I found using thin asparagus, spring onions and fresh herbs went really well with the Feta cheese. Spring Vegetable Frittata Recipe

Course: Main dish

Prep Time: 10 minutes

Cook time:  30 minutes

Ready time: 40 minutes

Tre Stelle® Product: Crumbled Feta

Serves: 4-6

Prep Method:  Stove top/Oven

Ingredients

8 eggs

1 tbsp olive oil

Assorted spring vegetables and herbs, approximately 2 cups chopped.

1/4 cup Tre Stelle® crumbled Feta

salt and pepper to taste

Directions:

Preheat the oven to 400 degrees.  Heat a cast iron skillet over medium heat and add the olive oil.

Whisk together the eggs, vegetables, herbs, feta, salt and pepper.

Pour the mixture into the skillet and cook for five minutes.

Transfer the skillet to the oven and continue cooking 20-25 minutes until firm in the center.

Let the frittata rest for 10 minutes before slicing.

Unique Easter Recipe

Most of us have Easter traditions, particularly around food, that play on repeat year after year (devilled eggs anyone?).  Perhaps your family makes an elaborate rack of lamb, or a glistening ham for dinner.  Maybe you’re more like my family, where Easter brunch is a big production that follows the giddiness of the egg hunt.  Whichever it is, meal prep shouldn’t be stressful or incredibly time consuming.  Easter should be spent relaxing with the family, and enjoying the delight of cooking for your loved ones.

 

If you’re willing to stray from tradition, you can save hours of cooking and still pull off major wow-factor dishes.  It’s easy to add some flare to your Easter entertaining that’s both simple and easy.  One of my favourite ways to impress my guests is by using store-bought puff pastry sheets because it’s highly impressive, extraordinarily versatile and easy to work with.

 

Nicole Harling Asparagus Ricotta Tart 2 1080x600My go-to way to use puff pastry is for savoury tarts.  Spring offers a wide variety of ingredients that are best served in season such as ramps (wild leeks), artichokes, fennel, and of course, asparagus.  It’s likely that asparagus might make its way to your Easter table, but this year, serve it up in an unconventional way – in tart form, wrapped with salty prosciutto and nestled on top of creamy Tre Stelle® Ricotta Cheese.

 

You hardly need a recipe at all, which is why this puff pastry tart is so remarkable!.  Season the Ricotta to your liking and spread it on! Serving a vegetarian meal?  Leave out the prosciutto and sprinkle the tart with Maldon salt for added texture and flavour.  Go ahead and add some chili flakes to the Ricotta if you like a touch of heat. This tart is simple, easy and adaptable to your family’s tastes.

 

So this Easter, impress your guests by whipping up this Asparagus and Ricotta Puff Pastry Tart, and enjoy the holiday with your family.

 

Asparagus and Ricotta Tart

 

1 sheet puff pastry, thawed (mine was about 9×13 inches)

1 cup Tre Stelle® Ricotta Cheese

1 clove garlic, minced

2 green onions, finely chopped

2 eggs, divided

¼ cup grated Tre Stelle Parmesan

Salt and pepper to taste

1 bunch of fresh asparagus, trimmed

4-5 slices prosciutto, but half or thirds, lengthwise

 

  1. Preheat oven to 425 degrees F.
  2. Line a baking sheet with parchment paper.
  3. Unroll puff pastry sheet and gently place on the parchment. Score a border in the pastry, about 1 cm from the edge the whole way around.  Using a fork, prick the bottom of the pastry (inside the border you just scored).
  4. In a small bowl, whisk one egg with about 1 tsp of water. Brush the egg wash onto the puff pastry.  Discard egg wash.
  5. Blind bake the pastry for 10 minutes. Remove from the oven.  Gently press down the pastry inside the border if it puffed up too much.
  6. Meanwhile, mix together Ricotta, garlic, green onions, one egg, Parmesan, salt and pepper. Wrap asparagus in prosciutto and set aside.
  7. Spread Ricotta mixture onto the puff pastry inside the border. Nestle the prosciutto wrapped asparagus on top of the Ricotta.
  8. Bake for another 10 minutes, or until the asparagus has started to soften and cheese is slightly bubbly.
  9. Allow to cool slightly. Slice into squares and serve warm or cold.
