The long days of summer that offered respite from the hustle and bustle of our Autumn to Spring routines, have come to a close. New stories have been written and lasting memories have been stowed away for reflection during the cold winter days ahead. And even though our lives didn’t come to a screeching halt during the dog days of summer, they seemed a little more manageable even with with camp drop-offs, sleep overs and the occasional baseball or soccer game.

So, what can you do to help ease your body and mind back into the routine of school drop-offs and rush out the door commutes all kicked off by the inevitable beacon of the alarm clock?

What if you could prepare a simple, healthy breakfast the night before? A breakfast the whole family can enjoy either on the go or at the table. Assembly is relatively minimal which means the little hands around your house can pitch in when it comes time to prep. And to be honest, my favourite part of this recipe is the flexibility to combine flavours.

I present to you Oatmeal in a jar! I know I call it a jar, but by all means, if you’re taking it to go, or sending your kids off to school wot h it, consider using shatter-proof containers.

Feel free to experiment with fruits that are in-season or other ingredients that you and your family enjoy. Cooking is meant to be fun and the fruits of your labour are something to savour.

Ingredients

1 cup | 240 g Tre Stelle® Extra Smooth Ricotta
1 cup rolled oats
1 1/3 cups | 330 mL milk
2 tbsp chia seeds, flax meal or hemp seeds
1 tsp | 4 mL vanilla extract
1/8 tsp salt
4 tbsp | 60 mL Honey or maple syrup
2 – 8 oz mason jars with lids

Directions

In a medium sized bowl, whisk together all ingredients until combined. Spoon into a jar and secure with lid. Refrigerate overnight or for at least 5 hours before eating.

 

 

 

 

 

 

 

Flavour combinations:

Chocolate Peanut Butter: Add 2 tablespoons each of peanut butter and cocoa; garnish with chocolate chips or chopped peanuts if desired.

Berry Cheesecake: Add 1 cup of cubed fresh strawberries or whole blueberries tossed with 1 teaspoon of lemon juice: garnish with additional blueberries or sliced strawberries if desired.

Apple Pie: Add 1 cup of cubed fresh apples tossed with 1 teaspoon of lemon juice, and a pinch of cinnamon: garnish with toasted sliced almonds if desired.
