Autumn is my favourite time of the year! Gorgeous colors grace the landscape; from vine ripened red apples to golden wheat crops ready to be harvested. There is an abundance of garden fresh produce eagerly waiting to be used in your fall and Holiday recipes. The kids are back in school and life goes back to comfort and routine. I love going for walks in the crisp morning air with the crunch of leaves at my feet. Autumn is also a time I look forward to making my favourite apple recipes.
For my Apple Galette recipe I decided to change things up a bit by using a savoury cheese like Tre Stelle Feta instead of something sweet. Normally, people would use something sweet in an apple dessert but I decided to get creative and went savoury with Feta!
I am fortunate to have the most spectacular apple tree in my yard that gets great sized apples that are similar in taste to a Macintosh. Perfect for all the tasty apple desserts I love to bake up for special occasions like Thanksgiving and Christmas. Holidays at my house always include fresh homemade apple pies!
Apple desserts are a Fall classic, and this recipe for Apple Feta Galette is exceptional. Have you ever tried using feta cheese in a dessert? Allowing yourself to get creative and experiment in the kitchen is a wonderful way to come up with new, tasty and your own original recipes!
In my recipe Apple Feta Galette; the salty, tangy flavor of feta balanced perfectly with the sweet, tart apple filling. This non-traditional combination will tantalized your taste buds in an unexpectedly delicious way.
1 piecrust (store bought or make your favourite recipe)
5-6 medium sized apples
½ cup granulated sugar (use a bit more if your apples are really tart)
1 tsp ground cinnamon
1 tbsp. cornstarch
1 tsp vanilla
2 tsp melted butter
1 tbsp. granulated sugar
1/3 cup crumbled Tre Stelle Feta cheese
1 tbsp. caramel sauce
Preheat oven to 350º F
Peel, core and slice apples. Place into large bowl.
In small bowl mix together sugar, cinnamon, and cornstarch.
Toss together with apples.
Stir in vanilla and toss to combine.
Place piecrust on parchment line baking sheet.
Pile with apples leaving about 2 inch border.
Fold the border up over the apples.
Brush the crust with melted butter.
Sprinkle crust edges and apples with granulated sugar.
Bake galette for 30 – 40 minutes until crust is golden brown.
Remove from oven and let cool.
Sprinkle with crumbled Tre Stelle Feta cheese.
Drizzle with caramel sauce.
