Romano is a hard, flavourful, pale yellow grating cheese made from sheep's milk. Thanks to a long aging period, Romano has a bolder flavour than its cousin Parmesan. This quality makes it a wonderful flavour-enhancing agent in soups, pasta dishes, quiches and pizza, where it is commonly paired with Mozzarella. The assertive flavour of Romano makes it a favourite for pesto and other sauces.
