Bagel and Lox Breakfast Salad

Dressing: 2 tbsp Tre Stelle® Mascarpone 1 tbsp freshly grated lemon zest 2 tsp honey 1 tsp Dijon mustard 1 clove garlic, peeled and minced ½ cup olive oil salt and freshly ground black pepper Salad: 1 small red onion, thinly sliced 1 tbsp capers (optional) 1 head butter lettuce, torn into bite sized pieces 4 oz smoked salmon or gravlax 4 eggs, soft boiled (3 minute eggs) (optional) 1 bagel, sliced vertically into ½” pieces, brushed with olive oil or softened butter and toasted
Dressing: Whisk dressing ingredients in a small bowl or shake all together in a jar; refrigerate until ready to use. Salad: Divide salad ingredients onto two salad plates; drizzle with dressing and serve with toasted bagel croutons. Top with top soft boiled eggs (optional).
