Bread and Tre Stelle® Grana Padano Soup
This simple Italian homestyle soup is reminiscent of a ribolitta but lighter and lemony-er!Prep Time:

Makes 4 servings
4 cups | 1 L chicken broth 3 garlic cloves, peeled and finely chopped 2 cups | 500 mL potato, peeled and diced into 1/4” cubes 3 slices Italian crusty bread cut into 1/2” cubes 3 tbsp | 45 mL olive oil 1/4 cup | 60 mL Tre Stelle® - Grana Padano Cheese, grated 1/2 tsp | 2 mL freshly grated lemon zest 1 tsp | 5 mL freshly squeezed lemon juice 1 tbsp | 15 mL fresh thyme, finely chopped Salt and pepper to taste
In a large saucepan add chicken broth and bring to a boil. Add garlic, potato, bread and olive oil; simmer for approximately 20 minutes, or until potatoes soften. Remove from heat and add Grana Padano Cheese, lemon zest, lemon juice, thyme and salt and pepper to taste. Garnish with a drizzle of additional olive oil if desired.
