Preheat oven to 350ºF (180ºC). Filling: Combine all ingredients in a medium bowl and whisk until smooth; set aside. Bread: Spray one 9” x 5” loaf pan with cooking spray and dust with flour; set aside. In a large bowl, add the eggs, brown sugar, butter, bananas and vanilla; whisk to combine. Add the flour, baking soda, salt, cinnamon and nuts (optional); using a spatula fold just until combined - do not over mix. Pour approximately two-thirds of the banana mixture into the prepared pan, smoothing the top lightly. Evenly pour Mascarpone filling over the mixture, smoothing the top lightly with a spatula. Top with remaining mixture, smoothing the top with a spatula carefully as to not disturb the filling layer and pushing into corners and sides as necessary. Bake for approximately 60 minutes or until golden and a toothpick inserted in the centre is clean.

Banana and Mascarpone Recipe FAQs

Can I use cream cheese instead of mascarpone cheese?

Yes, you can substitute for cream cheese in this banana and mascarpone recipe. While the flavor and consistency will be slightly different, replacing the cheese will not change the overall recipe. However, to mimic the texture of mascarpone, ensure your cream cheese is at room temperature before mashing it, so it softens. You can also add a spoon of sour cream to further mimic the overall airy consistency of mascarpone cheese. This will also allow you to pour and smooth the cream cheese as you would with the mascarpone with ease before putting the banana in the oven.

Should I add nuts to my banana bread with mascarpone cheese?

Absolutely, like any banana bread, adding nuts such as toasted walnuts, pecans, hazelnuts, cashews, or macadamia nuts can help enrich the overall flavor of your recipe –especially in a banana and mascarpone recipe. It also provides you with a satisfying crunch to every bite to offset the soft texture of the bread. Further, adding salted nuts enhances that sweet and salty balance that many people enjoy when eating sweetened loaves of bread, especially when it offsets the hint of acidity you taste in mascarpone cheese.

What is the difference between cream cheese and mascarpone cheese?

Although cream cheese and mascarpone cheese are similar, there are some noticeable differences bakers may not be aware of. For starters, mascarpone is made from butterfat, while cream cheese is made from whole milk and heavy cream. As such, cream cheese has a fat content of 55%, while mascarpone has a fat content of 75%. Further, cream cheese is known for its firm yet smooth texture and tangy flavoring. On the other hand, mascarpone cheese is a more velvety, whipped consistency that is slightly sweet with hints of nut and butter.
