Tre Stelle® Mascarpone Chocolate Chip Berry Torte

Makes 8 servings.
1 1/4 cups | 300 mL chocolate cookie crumbs 1/4 cup | 50 mL granulated sugar 1/4 cup | 50 mL butter, melted 1 tub | 475 g Tre Stelle® Mascarpone 1/2 cup | 125 mL whipping cream 1/4 cup | 50 mL granulated sugar 1 tbsp | 15 mL freshly grated orange rind 1 tsp | 5 mL vanilla extract 1 tbsp | 15 mL orange liqueur (optional) 2- ½ pints | 170 g each fresh raspberries, washed and dried on paper towels
Preheat oven to 375º F (190ºC). In a medium bowl, mix together cookie crumbs crumbs, sugar, and melted butter. Press mixture into the bottom and sides of a 9” fluted tart pan with removable bottom. Bake for 10 minutes; remove from oven and let cool completely before filling. In a medium bowl, combine the Mascarpone, whipping cream, sugar, orange rind, vanilla and orange liqueur together and beat with an electric mixer until stiff peaks form. Layer evenly onto tart crust and top with fresh raspberries. Alternatively add 1/2 cup (125 mL) of mini chocolate chips for a richer filling.
