Feta Sauce 1/2 cup | 125 mL Greek yogurt, plain 1/2 cup | 125 mL Tre Stelle® Crumbled Feta 1 small clove garlic, minced 1 tsp | 5 mL lemon juice 1/4 tsp | 1 mL finely grated lemon zest Burgers 1 can | 400 g chickpeas, rinsed and drained 1 small onion, peeled and cut into rough chunks 1 clove garlic 1/2 cup | 125 mL cilantro, roughly chopped 1/2 tsp | 2 mL ground cumin 1/2 tsp | 2 mL ground coriander 1/2 tsp | 2 mL red chili powder 1 large egg, lightly beaten 2/3 cup | 160 mL panko bread crumbs 2 tbsp | 30 mL canola oil for cooking burgers


Feta Sauce: Combine yogurt, Feta Cheese, garlic, lemon juice and lemon zest in a blender. Puree until smooth. Thin with additional yogurt if too thick. Cover and refrigerate until ready to use. Burgers: In the bowl of a food processor, add chickpeas, onion, garlic and cilantro; pulse until finely chopped. Stir in spices, egg and bread crumbs and form into 4 patties, each about 2/3" thick. In a large skillet or grill pan, heat the oil over medium heat. Cook the burgers for approximately 4 minutes per side. Place the patties into toasted pita bread pockets and garnish with Feta sauce and your favourite burger toppings. Makes 4 burgers
