Tre Stelle® Feta Filled Cucumber Rolls

Makes approximately 16 rolls
2 English cucumbers 3/4 cup | 175 mL Tre Stelle® Crumbled Feta Cheese 1/4 cup | 60 mL plain Greek yogurt 6 kalamata olives, pitted and finely chopped 1 tbsp | 15 mL fresh mint, finely chopped 1 tbsp | 15 mL fresh lemon juice 1/2 tsp | 2 mL fresh red chili, seeds removed and finely chopped pinch ground black pepper
Using a mandolin or a vegetable peeler, thinly slice cucumbers lengthwise. Lay the slices of cucumber on paper towels while making the filling. In a medium bowl combine the crumbled Feta Cheese, yogurt, olives, mint, lemon juice, chili and black pepper. Mash slightly with a fork to combine. Place a heaping teaspoonful of mixture at the end of each cucumber slice, roll up and secure with a toothpick. Refrigerate until ready to serve.
