Feta Stuffed Grilled Avocados

3/4 cup Tre Stelle® Feta Cheese, crumbled 3/4 cup fresh corn kernels 1 jalapeño pepper, seeded and finely chopped 3 tbsp fresh cilantro, finely chopped ½ small red onion, peeled and finely chopped 1 can(127 mL) green chilies, drained and finely chopped 2 tbsp olive oil 2 tbsp fresh lime juice pinch granulated sugar 3 avocados, pit removed, sliced in halves olive oil for brushing avocado
Combine the stuffing ingredients together in a medium bowl. Cover and refrigerate until ready to use. Brush avocado halves with olive oil. Preheat outdoor grill or stove-top grill pan to medium-high. Sear halved avocados and grill 3-4 minutes per side. Scoop a little bit of the avocado out of the centre of each if you want to add more filling (tip: add scooped avocado bits to stuffing). Fill the cavities with stuffing and cook avocados for an addition 5 minutes or until Feta begins to soften. Pairing tip: A simple oil and vinegar dressed fresh cherry tomato salad is an excellent side to serve with this recipe.
