Hearts of Palm Salad with Tre Stelle® Feta

Makes 4 servings
¼ cup | 60 mL olive oil 4 tsp | 20 mL balsamic vinegar 1 tsp | 5 mL Dijon mustard 1 tsp | 5 mL maple syrup ½ tsp | 2 mL salt 1 clove garlic, minced 1 package | 142 g arugula 1 can | 400 g hearts of palm, drained and cut into 1/4 slices 1 red Anjoi pear, cored and finely sliced 3/4 cup | 110 g TreStelle® Feta, broken into ¼” pieces 4 | green onions, finely sliced 1 tbsp | 15 mL fresh chives, finely chopped
In a small bowl combine olive oil, balsamic vinegar, Dijon, maple syrup, salt and garlic; whisk until combined. Divide arugula between four salad plates; top equally with hearts of palm, pear slices and Feta Cheese. Sprinkle with green onions and chives. Drizzle dressing on top of each salad and serve.
