Lemon, Mint and Tre Stelle® Ricotta Bars

2 tubs | 475 g each Tre Stelle® Ricotta Cheese, drained 3/4 cup | 175 mL granulated sugar 3 eggs, beaten 1 tbsp | 5 mL fresh lemon rind 2 tbsp | 30 mL fresh mint, finely chopped 1 vanilla or lemon cake mix 1/4 cup | 50 mL fresh lemon juice Confectioners sugar [icing sugar] for garnish Additional fresh mint leaves for garnish if desired


Preheat oven to 350ºF (180ºC). In a large bowl, combine Ricotta, sugar, eggs, lemon rind and mint, stir with a large spoon or spatula until blended. Cover and refrigerate until ready to use. Prepare cake mix according directions on box, except substitute lemon juice for water. Pour cake batter into a 12”x9” baking pan. Carefully spoon Ricotta mixture over top. Bake for 45 minutes. Remove from oven and set aside to cool. Refrigerate until ready to serve. Prior to slicing and serving, sift confectioners sugar over top. Garnish with mint leaves if desired.
