Ingredients:

Provolone Cheese Sauce: 1 tbsp | 15 mL butter 1 tbsp | 15 mL all purpose flour 2 cups | 500 mL milk (whole milk is preferred) 1 pkg | 165 g Tre Stelle® Provolone Cheese Slices 1/2 cup | 125 mL Tre Stelle® Romano Cheese, grated salt and freshly ground black pepper to taste 1 1/2 lbs | 680 g top sirloin steak 1 tbsp | 15 mL olive oil 1 small onion, peeled and finely sliced 1 green pepper, finely sliced 1 cup | 67 g cremini mushrooms, finely sliced salt and freshly ground black pepper to taste 4 large hoagie rolls additional Tre Stelle® Provolone Cheese Slices (optional)

Instructions:

Place steak in freezer one hour prior to cooking (this allows the meat to be easily thinly sliced before cooking). Cheese sauce: in a medium saucepan melt butter over medium heat; add flour and whisk for 1 minute. Slowly whisk in milk and continue to cook whisking constantly until thickened; approximately 5 minutes. Remove from heat and add Provolone and Romano cheeses; stir until melted, season with salt and pepper. Cover and keep warm until ready to use. Remove steak from freezer and slice as thinly as possibly away from the grain. Preheat oven to 350ºF (180ºC). In a large non-stick skillet over medium-high heat add olive oil; when oil is hot add vegetables and quickly sauté until vegetables are slightly softened; approximately 5 minutes. Season with salt and pepper. With a slotted spoon remove from skillet, place in oven to keep warm while cooking steak. At this time place rolls in oven to warm. In the same skillet, over medium-high heat, cook the steak in two batches; season with salt and pepper; remove from heat and prepare to assemble. Place slices of Provolone Cheese on the bottom of each roll (optional); top with equal amount of vegetables and steak; top with Provolone Cheese sauce, return to oven and bake for approximately 5 minutes (optional) and serve.
