Martini Brownies with Tre Stelle® Mascarpone Cream

A martini glass is the perfect vessel for serving bite sized desserts. The Mascarpone cream is the crowning glory – you might even try a dollop in your coffee!

Brownies: 3/4 cup | 175 mL all-purpose flour 1/2 cup | 125 mL unsweetened cocoa powder 1/2 tsp | 2 mL salt 1/2 cup | 125 mL butter, melted 1 1/2 cups | 375 mL granulated sugar 1 1/2 tsp | 7 mL vanilla extract 2 eggs 1/2 cup | 125 mL semi-sweet chocolate chips Mascarpone Cream: 1 1/2 cups | 375 mL Tre Stelle® Mascarpone 1/2 cup | 125 mL heavy cream (whipping cream) 1/2 cup | 125 mL confectioners' sugar 1 tsp | 5 mL vanilla


Brownies: Preheat oven to 350ºF (180ºC). In a medium bowl sift the flour, cocoa powder, and salt; set aside. Lightly grease a 9”x13” baking dish; set aside. In a large bowl combine the melted butter, sugar, and vanilla. Beat in the eggs, one at a time, mixing well after each, until thoroughly blended. Gradually stir flour mixture into the egg mixture until blended. Stir in the chocolate chips. Spread the batter evenly into the prepared baking dish. Bake in preheated oven until an inserted toothpick comes out clean, 35 to 40 minutes. Remove from oven; when cool, cut into 2”squares and set aside until ready to assemble. Mascarpone Cream: In a large bowl, whisk the Mascarpone, heavy cream, confectioners' sugar, and vanilla until smoothly blended. (For a pouring consistency additional teaspoons of cream can be added). To assemble: Place 3 brownies in each martini glass, top with a spoonful of Mascarpone cream and add your favourite macerated berries (see Tip) if desired.
