Tre Stelle® Mascarpone Chocolate Cream Pie

Makes 6 - 8 servings
Crust 1 1/2 cups | 375 mL chocolate wafer crumbs 2 tbsp | 30 mL granulated sugar 1/4 cup | 60 mL butter, melted Filling 3/4 cup | 175 mL whipping cream 1 tub | 475 g Tre Stelle® Mascarpone 1 cup | 250 mL semi sweet chocolate chips, melted 1 tbsp | 15 mL vanilla extract Topping 1 1/2 cups | 375 mL whipping cream 1 tsp | 5 mL vanilla extract 3 tbsp | 45 mL granulated sugar sifted cocoa or chocolate curls for garnish (optional)
Preheat oven to 350ºF (180ºC). Crust: In a medium bowl combine chocolate wafer crumbs, sugar and butter; press into the bottom and sides of a 9” pie plate or 9” tart pan. Bake for 10 minutes; remove from oven and cool thoroughly before filling. Filling: In a medium bowl with an electric mixer, whip cream until thickened; set aside. In a large bowl combine Mascarpone, melted chocolate and vanilla extract; beat until smooth and creamy – approximately 10 minutes. Fold in whipped cream until incorporated. Spread filling evenly onto wafer crumb crust and refrigerate while making topping. Topping: Add whipping cream to a large bowl and beat until soft peaks form; add vanilla and gradually add sugar and continue to whip until thickened. Top pie with whipped cream, garnish with cocoa and/or chocolate curls (optional).
