Tre Stelle® Mascarpone Cream Puffs with a Salted Caramel Drizzle
Brown sugar mixed into the Mascarpone gives it a rich caramel-like flavour. Topping the cream puffs with a touch of salt will convince your tastebuds why this combination of flavours is irresistible!Prep Time:

Makes approximately 30 puffs.
1/2 cup | 125 mL water 1/4 cup | 60 mL butter pinch salt 1/2 cup | 125 mL all purpose flour 2 large eggs Caramel drizzle 1 cup | 250 mL granulated sugar 6 tbsp | 85 g butter 1/2 cup | 125 mL whipping cream Mascarpone filling 1 cup | 250 mL whipping cream 1 tub | 275 g Tre Stelle® Mascarpone 1/4 cup | 60 mL brown sugar 1/2 tsp | 2 mL vanilla gray or coarse sea salt for garnish
Preheat oven to 425ºF (220ºC). In a medium saucepan combine water and butter; bring to a boil. Add flour and salt, stir to incorporate evenly, immediately remove heat and transfer to a mixing bowl. Add eggs all at once and carefully blend until dough is tacky, shiny and smooth. Chill for one hour. Drop teaspoonfuls of dough on a parchment paper lined baking sheet. Bake for 10 minutes; reduce oven temperature to 400ºF (200ºC) and bake for an additional 25 minutes or until golden. For caramel drizzle: Add granulated sugar to a medium saucepan over medium heat; cook, stirring continuously until sugar dissolves and begins to turn a light amber colour (approximately 5 minutes). Immediately remove from heat and add butter. Stir until melted and carefully stir in 1/2 cup whipping cream. Cool and refrigerate until ready to use. For Mascarpone filling: In a medium bowl beat 1 cup whipping cream until stiff peaks form; set aside. In another bowl beat Mascarpone, brown sugar and vanilla until smooth. Fold whipped cream into Mascarpone mixture. Cut tops off of puffs and place a teaspoonful of Mascarpone mixture into each, replace tops, drizzle with caramel and sparingly sprinkle with sea salt.
