Ingredients:

Filling 1/2 cup | 125 mL Tre Stelle® Mascarpone 1/4 cup | 60 mL granulated sugar 1 large egg 1 tsp | 5 mL all purpose flour Bread 2 large eggs 3/4 cup | 175 mL dark brown sugar 1/2 cup | 125 mL butter, melted 3 ripe bananas, peeled and mashed 1 tsp | 5 mL vanilla 1 1/2 cups | 375 mL all purpose flour 1 tsp | 5 mL baking soda 1/2 tsp 2 mL salt 1 tsp | 5 mL cinnamon 1/2 cup | 125 mL chopped nuts (optional)

Instructions:

Preheat oven to 350ºF (180ºC). Filling: Combine all ingredients in a medium bowl and whisk until smooth; set aside. Bread: Spray one 9” x 5” loaf pan with cooking spray and dust with flour; set aside. In a large bowl, add the eggs, brown sugar, butter, bananas and vanilla; whisk to combine. Add the flour, baking soda, salt, cinnamon and nuts (optional); using a spatula fold just until combined - do not over mix. Pour approximately two-thirds of the banana mixture into the prepared pan, smoothing the top lightly. Evenly pour Mascarpone filling over the mixture, smoothing the top lightly with a spatula. Top with remaining mixture, smoothing the top with a spatula carefully as to not disturb the filling layer and pushing into corners and sides as necessary. Bake for approximately 60 minutes or until golden and a toothpick inserted in the centre is clean.

 Can I use cream cheese instead of mascarpone cheese?

 Yes, you can substitute for cream cheese in this banana and mascarpone recipe. While the flavor and consistency will be slightly different, replacing the cheese will not change the overall recipe. However, to mimic the texture of mascarpone, ensure your cream cheese is at room temperature before mashing it, so it softens. You can also add a spoon of sour cream to further mimic the overall airy consistency of mascarpone cheese. This will also allow you to pour and smooth the cream cheese as you would with the mascarpone with ease before putting the banana in the oven.
