Tre Stelle® Mascarpone Pie with Strawberries and Peaches

Make it a Parfait! Alternate layers of graham cracker/almond mixture with Tre Stelle® Mascarpone filling into parfait or wide mouth glasses and top with fruit.

Crust: 3/4 cup graham cracker crumbs 3/4 cup ground almonds 5 tbsp salted butter 3 tbsp almond butter Filling: 1 tub (475 g) Tre Stelle® Mascarpone 1/4 cup whipping cream 1/4 cup icing sugar 1 tbsp fresh lemon zest 2 tsp vanilla extract 1 tsp almond extract Garnish: 8 fresh strawberries, sliced 1 fresh peach, pitted and sliced 3 tbsp liquid honey (optional)


Crust: Melt butter and almond butter together in a small saucepan. In a bowl, combine graham cracker crumbs and ground almonds. Pour melted butters over graham/almond mixture; stir. Reserve 1 tbsp of mixture for garnish, press into the bottom and sides of an 8” pie or tart pan with a removable bottom; refrigerate until ready to use. Filling: In a large bowl, beat the Tre Stelle® Mascarpone, whipping cream, icing sugar, lemon zest, vanilla, and almond extract together until creamy. Spread evenly over crust, cover, and refrigerate for at least hour prior to serving. Assembly: Arrange strawberries and peaches decoratively on top of pie, sprinkle with remaining crust mixture, drizzle with honey, slice, and serve.
