Tre Stelle® Mozzarella Crab Cake Burgers
Take this all-star crab cake recipe and make it a superstar burger. The mildness of the melted mozzarella works well with the spicy chipotle mayonnaise.Prep Time:

Makes 4 burgers
Chipotle Mayonnaise: 3/4 cup | 175 mL mayonnaise 1 tbsp | 15 mL chipotle chilies in adobe sauce 1 tsp | 5 mL adobo sauce from chipotle chilies 1 tbsp | 15 mL fresh cilantro, finely chopped juice and zest from half of a fresh lime Burgers: 2 cans | 120 g each crabmeat, drained, rinsed and squeezed very dry 1/4 cup | 60 mL chipotle mayonnaise 2 spring onions, white part only, thinly sliced 1 egg, lightly beaten 1 tsp | 5 mL Worcestershire sauce 1 tsp | 5 mL dried mustard pinch cayenne pepper 1 cup | 250 mL breadcrumbs, preferably panko crumbs 2 tbsp | 30 mL canola oil 1 pkg | 175 g Tre Stelle® Sliced Mozzarella Cheese 4 soft Kaiser buns, split and toasted 4 slices fresh tomato
Chipotle Mayonnaise: In a food processor combine the mayonnaise, chile, adobe sauce, cilantro, lime juice and zest. Pulse until smooth. Cover and refrigerate until ready to use. Burgers: In a large bowl combine crabmeat, mayonnaise, spring onions, egg, Worcestershire sauce, dried mustard and cayenne pepper. Stir well to combine; gradually stir in 1/2 cup of the breadcrumbs. Form mixture into 4 – one-inch thick patties. Dredge in remaining breadcrumbs, cover and refrigerate until ready to use. (Freezing patties for a half hour prior to cooking will help the patties stay together while cooking). In a large skillet over medium heat add oil. Fry patties, turning once until golden; approximately 4 minutes per side. Transfer to paper towels to drain. Top each burger with two slices of Mozzarella Cheese. Spread spoonfuls of chipotle mayonnaise onto toasted buns; add burger and top with a thick slice of fresh tomato. Additionally add your favourite burger accompaniments if desired.
