Orange Rosemary Baked Tre Stelle® Feta Bites with Shrimp and Avocado

Makes approximately 18 shrimp bites
18 – 1” cubes | 240 g Tre Stelle® Feta Cheese 2 avocados 1/2 lemon 3 tbsp | 45 mL orange marmalade 1 tsp | 5 mL fresh rosemary, finely chopped 1 tsp | 5 mL crushed chili pepper flakes 2 tbsp | 30 mL olive oil 18 medium | 200 g cooked shrimp, tails removed toothpicks for assembly
Pre heat oven to 400ºF (205ºC). Drain Feta Cheese cubes on paper towels to blot excess liquid and place into an oven proof dish; set aside. Dice avocado into approximate one inch cubes and place in a medium bowl; drizzle with lemon juice, cover and refrigerate until ready to use. In a microwavable bowl combine marmalade, rosemary and chili pepper flakes and microwave for 60-70 seconds or until the marmalade slightly liquifies. Add the olive oil to the marmalade and mix well. Pour the mixture over the feta and gently toss to coat the cubes evenly. Bake for 15 minutes. Remove baked Feta Cheese from oven and allow the dish come to room temperature. (This allows the Feta Cheese to soak up the flavours of the marinade). To assemble; pierce an avocado cube with a toothpick followed by a shrimp and ending with a cube of the baked Feta Cheese. Drizzle assembled bites with remaining baking liquid and serve immediately.
