Tre Stelle® Parmigiano Reggiano Red Pepper Pesto

Makes approximately 2 cups
2 medium cloves garlic 1/4 cup 60 mL almonds, toasted pinch sea salt 1 tsp | 5 mL paprika (plain) 1 tsp 5 mL paprika (smoked) 1/4 cup | 60 mL fresh cilantro, coarsely chopped 6 roasted red peppers, skins removed 1/4 cup | 60 mL Tre Stelle® Parmigiano Reggiano Cheese, grated 1/4 cup | 60 mL olive oil
In the bowl of a food processor, add garlic, almonds, salt and paprika; pulse until finely mixed. Add cilantro and red peppers; continue to pulse until finely minced. Add Parmigiano Reggiano Cheese and pulse just until blended. Pour pesto into a bowl, using a wooden spoon, stir in olive oil.
