Pizza Soufflé with Tre Stelle® Mozzarella
Not your traditional soufflé! Similar to bread pudding with the flavours of a pizza that is fluffy, light and cheesy.Prep Time:

Makes 8 – 10 servings
2 | 340 g each Tre Stelle® Mozzarella balls, sliced into 1/8: slices 1 fresh baguette, sliced thinly 2 1/2 cups | 625 mL milk 2 1/2 cups | 625 mL tomato sauce 1 tbsp | 15 mL Italian seasoning 1/2 cup | 125 mL Tre Stelle® Parmesan cheese 6 eggs salt and pepper to taste 3 tbsp | 50 mL butter, chilled and cubed 1/2 lb | 250 g panchetta, fried until crisp and crumbled
Preheat oven to 350°F (180°C) Butter sides and bottom of a 3 quart casserole dish; set aside. Soak the baguette slices in milk for 10 minutes and drain to remove excess liquid. Line the bottom of the casserole with bread slices. Similar to lasagna, top bread slices with tomato sauce, a sprinkle of Italian seasoning, add mozzarella slices and panchetta. Continue making layers until casserole is nearly full finishing with tomato sauce. Beat eggs with parmesan, salt and pepper. Pour over casserole slowly until all liquid is absorbed. Top with cubed butter. Place casserole on a baking sheet and bake for 1 hour until puffed and golden. Serve immediately. Alternate: evenly distribute 1/2 cup (125 mL) each of chopped pepperoni and chopped green peppers throughout casserole while preparing layers.
