Tre Stelle® Ricotta Stuffed Baked Potatoes
A baked potato is good, a twice baked stuffed potato is delicious, a twice baked, Tre Stelle® Ricotta stuffed baked potato is perfection!Prep Time:

3 small baking potatoes 2 tbsp | 30 mL olive oil 3/4 cup | 175 mL Tre Stelle® Ricotta Cheese 1/4 cup | 50 mL Tre Stelle® Grated Parmesan Cheese 1/2 cup | 125 mL Tre Stelle® Shredded Asiago Cheese 1/4 cup | 50 mL creamy Caesar salad dressing salt and pepper if desired olive oil and grated parmesan cheese if desired
Preheat oven to 450ºF (230ºC). With a fork, pierce potatoes in several places. Place potatoes directly on oven rack and bake until fork tender; approximately 35 minutes. Allow potatoes to cool and cut in half lengthwise. Using a spoon, scoop out flesh and place flesh in a medium bowl, save skins and set aside. With a potato masher, mash potatoes until desired texture is achieved [smooth or chunky} While adding olive oil; blend to incorporate. Add ricotta, parmesan, asiago and salad dressing. Add salt and pepper if desired. Stir and spoon mixture evenly into reserved potato skins. Top with additional grated parmesan and drizzle with olive oil if desired. Place potatoes on a baking sheet lined with aluminum foil. Bake for 15 minutes or until golden brown.
