Roasted Apricots with Honey and Tre Stelle® Mascarpone

1 tub | 275 g Tre Stelle® Mascarpone 2 tbsp | 30 mL honey 6 fresh apricots, pits removed and cut in halves 3/4 cup | 175 mL granulated sugar 4 amaretti cookies, crumbled
Preheat oven to broil. In a small bowl stir together Mascarpone and honey. Set aside or refrigerate until ready to use. Dip cut side of each apricot half into granulated sugar and place sugar side up in an oven-safe dish. Place under broiler and cook until sugar begins to caramelize; immediately remove from oven and allow to cool – approximately 5 minutes. Top each apricot with a dollop of the Mascarpone/honey mixture. Sprinkle with crumbled cookies and top with fresh mint (optional). Serve warm.
